Highlands DY502 is a distillers active dry yeast (DADY) selected for malt and grain whisky fermentations, supplied in a 1kg pack for production volumes. A concentrated, stable strain of Saccharomyces cerevisiae offering vigorous fermentation and good alcohol tolerance across grain, molasses and sugar washes, with a flavour contribution described as a mix of juicy fruit and elegant floral notes.
Rehydrate in roughly ten times its mass of water at 32-36C, stir for 10-15 minutes, then pitch; a typical dose is 0.5-1g per litre of wort (500-1000ppm). Confirm pitching rate, temperature range and alcohol tolerance for your wash against the supplier specification.
