Most
Developed by the “Top Hops” breeding program and released around 2020, Most represents a radical departure from the traditional spicy and herbal profile of Czech noble hops. Its name translates to “Bridge” in Czech, signifying its role in bridging the gap between traditional European terroir and the intense fruitiness of modern American and Australian varieties. Most offers a vivid aromatic bouquet dominated by ripe strawberry, sweet bubblegum, and pink grapefruit, with a subtle underlying citrus zest. Despite its high alpha acid potential, it provides a remarkably clean and smooth bitterness. It has quickly become a favorite for brewers looking to create fruit-forward lagers or “New Wave” pilsners that maintain a crisp, drinkable European soul.
Key Benefits
- Unique Fruit Profile: Exceptional strawberry and bubblegum notes that are rare in European hops.
- Modern Czech Terroir: Combines high-impact “New World” aromatics with the clean drinkability of Czech lagers.
- High Oil Content: Boasts a significant oil-to-alpha ratio, making it potent for late additions.
- Versatile Dual-Purpose: Efficient enough for bittering while being aromatically complex enough for dry hopping.
Applications
- Brewing: Perfect for India Pale Lagers (IPLs), Modern Pilsners, Session IPAs, and Belgian Blondes.
- Distilling: A unique botanical for gins seeking a sweet berry and tropical fruit top note.
- Cider Making: Enhances apple ciders with a bright, “candy-fruit” or strawberry-like complexity.
- Winemaking: Can be used in botanical infusions for summer aperitifs or vermouths requiring a playful fruit lift.
Typical Usage
- Aroma/Flavour: Added during the final 10–0 minutes of the boil or in the whirlpool to preserve strawberry esters.
- Dry Hopping: 3–8g per litre to fully express the tropical and bubblegum aromatics.
- Bittering: Effective for early boil additions to provide a firm yet smooth and clean bittering foundation.
Technical Data
- Alpha Acids: 8.0% – 12.0%
- Beta Acids: 4.0% – 6.0%
- Total Oil: 1.5 – 2.5 ml/100g
- Co-Humulone: 20% – 25% of alpha acids
- Myrcene: 40% – 50% of total oil
Storage and Handling
Store in cold, dry conditions at temperatures between -1°C and 5°C. Most has good storage stability, but its specific “sweet-fruit” esters are highly volatile. To protect its unique strawberry and bubblegum character, always keep in original vacuum-sealed, oxygen-barrier packaging and use promptly after opening.
Summary
Most is the “bridge” to the future of Czech brewing; providing an intense and unique strawberry-tropical aroma that allows for the creation of modern, fruit-forward beers without losing European elegance.
